Carrot sip


Winters are in full swings. All of us are enjoying the special gift of winter, dry fruits. Another special gift of winter is carrot which is very beneficial for our health especially for eye sight. Now I am going to tell you some carrot recipes to enjoy this winter.


Ingredients
3 carrots, fresh and juicy
1 tbsp fresh cream
1 tbsp sugar
3-4 mint leaves
1 tsp lemon juice
1/4 tsp pepper powder
1/4 tsp salt
2 1/2 glasses water (500 ml approx.)
1 cup water for boiling carrots


Method
- Wash carrots, scrape and cut in chunks. Boil the carrots in a cup of water, cover and simmer for five minutes. 
- Mince or chop mint leaves very finely. Pour into large plate, and let it cool completely. 
- Put carrots in a mixer, and add lemon juice, salt, sugar, pepper. Run till carrots are well pulped. Add water. Run to mix well. 
- When well  blended, strain through sieve. Add mint, stir. 
- Serve chilled in tall glasses, with a small swirl of cream over top.
