Coconut Toast

Coconut Toast with caramelized sugar makes a great do it yourself morning pastry and it is quick and easy enough to be a mid day snack as well.

Ingredients
    * 1 egg, lightly beaten
    * 1 cup flaked coconut
    * 1 cup sugar
    * 1/2 cup butter, melted
    * 1 tsp vanilla extract
    * 12 white bread slices

Method
    * Preheat oven to 350 degree F.
    * Place coconut, sugar, butter, egg and vanilla in a large bowl.
    * Mix until well combined.
    * Spread this mixture over each slice of bread.
    * Place bread slices on ungreased baking tray.
    * Bake for 15-20 minutes or until lightly browned.
    * Serve with Coffee.
