Coconut Bread

Coconut Bread  is a great bread recipe for those who are looking for something gluten free and lower in carbohydrates at the same time.

Ingredients
    * 4 eggs
    * 3 cups all purpose flour
    * 1 tsp baking powder
    * 1/2 tsp baking soda
    * 1/2 tsp salt
    * 2 cups sugar
    * 1 cup buttermilk
    * 1 cup flaked coconut
    * 1 cup walnuts, chopped
    * 3/4 cup vegetable oil
    * 2 tsp coconut extract

Method
    * Preheat oven to 325 degree F.
    * Lightly grease two 8×4 inch loaf pans with cooking spray.
    * In a large bowl, combine together flour, baking powder, baking soda and salt.
    * In a separate bowl, add sugar, oil, eggs and coconut extract.
    * Stir until well combined.
    * Now add to flour mixture alternately with buttermilk.
    * Stirring just until moistened.
    * Stir in coconut and chopped walnuts.
    * Pour into prepared loaf pans.
    * Bake for 1 hour or until toothpick inserted near the center comes out clean. Let it cool on a wire rack for 10 minutes.
    * Then cool completely.
    * Cut into slices.
    * Serve with Honey and coffee.
