Coconut French Toast

Coconut French Toast is a delicious, low fat and healthy recipe. The coconut topping adds crunch to this creamy French toast delight! Best of all, it’s ready in under 15 minutes.

Ingredients
    * 12-14 bread slices(one day-old)
    * 12 eggs
    * 1 cup flaked coconut
    * 1-1/4 cups milk
    * 2 tsp sugar
    * 1 tsp ground cinnamon
    * Maple syrup as required

Method
    * Preheat oven to 475 degree F.
    * Lightly grease a baking tray with cooking spray.
    * In a large bowl, beat eggs with milk.
    * Stir in sugar and cinnamon, until sugar is dissolved.
    * Now dip each bread slice in it.
    * Let soak for 30 seconds on each side.
    * Then coat both sides with coconut.
    * Place coconut bread slices on the prepared baking tray.
    * Bake for 5 minutes on each side or until golden brown.
    * Serve with Maple Syrup.
