Ideal on a rainy afternoons with Pakistani chaai. Its' a simple and nutritious snack. Parathas are so versatile that they can be eaten at anytime. Cabbage is a commonly liked vegetable which is very rich in fiber. Cabbage for this preparation needs to be shredded fine. A mandoline works wonderfully.
Ingredients
4 cups Wheat Flour
1/2 cup Yogurt
1/2 cup Oil or Ghee
1/4 th cup Sugar
Salt to taste
4 teaspoons Cumin powder
For the filling:
2 cups finely shredded Cabbage ( squeeze out all water)
1 cup mashed Potato
1 teaspoon Garam masala
1 teaspoon Cumin powder
Salt to taste
Method
Make a well in the flour. Add the yogurt, sugar and oil and mix well. Now add warm water to make a soft dough. For this you will have to knead the dough well. Prepare the dough one hour ahead.
Prepare vegetable mixture by mixing all ingredients.
Divide the dough into 10 equal portions and make 10 balls with the vegetable mixture. Take one portion of the dough and flatten the surface. Place a vegetable ball in the middle of this and enclose it with the dough. Roll out the dough into a circle approximately 6 inches in diameter.
Heat in a frying pan or skillet for a minute then brush with little oil or ghee. Shallow fry the other side. Cook the paratha till both the sides turn golden brown. Serve hot with a Chutney.
