This traditional rice is an amazing combination of spicy flavours and mouth-watering textures. When served with low fat curds, or raita, it makes a complete meal in itself. Instead of brinjals and tendli, you can choose vegetables that are handy and whip up an easy nutritious meal in a jiffy.
Ingredients
1 cup rice
50 gms green peas
50 gms potatoes
50 gms brinjals
1 chopped onion
2 tbs chopped coriander
1/4 tsp turmeric powder
2 tsp cumin powder
2 tsp chilli powder
3/4 tsp all spice powder
2 tbsps oil
1 tbsp chopped
2 tbsps grated fresh coconut
2 green chillies
2 tbsps ginger paste
2 tbsps garlic paste
Salt to taste
Method
Cut the potatoes and brinjals into big pieces. Mix rice, vegetables, onion, coriander, turmeric powder, cumin powder, chilli powder, all spice powder, ginger and garlic pastes, salt and oil, and add one and a half cups of water. Cover and microwave on high power for 17 to 18 minutes. Decorate with chopped coriander.
