Italian herb pizza crust

Ingredients

50 oz active dry yeast
6 cups flour
2 cups warm water
2 tbsp white sugar
1/4 cup olive oil
1 tbsp salt
1 tbsp dried basil
1 tbsp dried oregano
1 tsp garlic powder
1 tsp onion powder
1/2 cup grated cheese

Method

Mix yeast, warm water and white sugar in a large bowl. Set aside for five minutes, or until mixture becomes foamy. Stir olive oil, salt, herbs, garlic powder, onion powder, cheese, and three cups of flour into the yeast mixture. Gradually add in the next three cups of flour. Knead the dough until it is smooth and rubbery. Place in a greased bowl and cover the surface of the dough with oil. Cover with a damp linen cloth and leave it to rise for one hour, or until the dough has doubled in size.

Punch the dough down to release all the air. Divide it into two balls. Roll it out on a floured surface and place it in a greased pizza tray. Leave it to rise until it is double in size, for 30 minutes. Use your favourite pizza recipe for the topping. Bake at 175 C for 35 minutes.
