Ginger Chicken

Ginger is one of the most commonly used ingredient of Indian Cuisine. Chicken Ginger is a popular chicken recipe in India-Pakistan. This very spicy recipe is much similar to the Chinese Ginger Chicken recipe which is popular in Chinese Cuisine. However, the difference between the Chinese and Indian recipes is that Indian method uses more spices and has a strong flavor of ginger and spices than Chinese.

Ingredients
     1 kg chicken bone less (cut into small pieces)
     3 thumb size ginger grated
     1 tbsp soy sauce
     1 tbsp vinegar
     2 tsp lemon juice
     1 tsp red chili powder
     1 tsp green chili paste
     1 tsp garlic paste
     1/2 tsp cumin powder
     1 tsp gram masala powder
     1 chopped onion
     1/2 tsp black pepper powder
     Salt to taste
     3 tbsp corn flour
     Oil for fry

Method
Wash chicken and marinate with garlic paste, red chili powder, green chili paste, vinegar, black pepper, gram masala powder, cumin powder, and salt. Marinate 1-2 hour in refrigerator.

Now sprinkle corn flour on the hole chicken mixture and mix well. Heat oil in a large pan and add chicken mixture, fry till light golden brown in color. Remove and drain on paper towel.

Grind the onion to paste, heat some oil in a pan and add onion paste, saute in 3-4 minutes on a low flame. Now fry onion till nicely browned.

Add the rest grated ginger, lemon juice, and soy sauce. Cook in 2-3 minutes and add fried chicken pieces , Saute till the masala coats the chicken nicely.

Cook till the chicken is done. Avoid adding water you just used sprinkled little mine was a dry side. You can have a little gravy if you want.

Delicious and spicy ginger chicken is ready to serve. Serve hot with rice or chapati and tomato chili sauce. Garnish by tomatoes and green salad.
