Vegetable Omelet


2 eggs
1 tsp black pepper
1½ capsicum, chopped
1–2 green onions, chopped
2–3 green chillies, chopped
Coriander leaves, chopped
Salt to taste
Oil for frying


Beat eggs, add vegetables, salt and pepper and mix well.
Heat oil in a frying-pan, add the egg mixture and cook slowly.
Lift with spatula and turn over to cook the other side.
Fold and serve hot.
