Indian Aloo Gobi

Aloo Gobi is a cuisine dish made with potatoes (aloo), cauliflower (Gobi). It is yellowish in color, due to use of turmeric. This vegetarian aloo gobi recipe ingredients are red chili powder, turmeric powder, cumin seeds, garlic, ginger paste, black pepper powder, gram masala powder, tomatoes, onion, cardamon, salt, Desi ghee. Aloo Gobi can be served by chapati or rice.

Ingredients

     4 medium size potatoes
     1 large size cauliflower
     2 tsp red chili powder
     1/2 tsp cumin seeds
     3 tomatoes
     2 fresh small green chilies chopped
     1 small size onion
     1 tsp turmeric powder
     1 tsp black pepper powder
     1/2 tsp gram masala powder
     1 tsp ginger paste
     1 tsp garlic paste
     2 cardamon
     2 tbsp coriander leaves
     Salt to taste
     2 tbsp pure ghee (Desi ghee)
     1/2 cup vegetable oil

Method

Cut potatoes in a small pieces.Start boiling potatoes in a saucepan. Let them boil for at least 10-15 minutes in medium heat. After they are done, turn off the heat and let them stand in the water.

Heat the vegetable oil in a large skillet. Add chopped onion and saute 3 minutes, Now add cumin seeds, ginger paste, garlic paste, salt, red chili powder, turmeric powder, black pepper, finely chopped tomatoes, cardamon and cook this gravy at least 5-10 minutes.

Now add cauliflower in to the gravy and cook 10 minutes in a low heat. Add boil potatoes and mix well. Cook this mixture until the oil start to separate. Add pure ghee (Desi Ghee) and 1/2 cup water .

Remove from heat and pour on serving dish . Garnish by fresh coriander leaves, chopped fresh small green chilies and gram masala.

Easy and delicious Aloo Gobi is ready to eat serve hot with chapati or rice.
