Pumpkin Fruit Cake


Ingredients
    1 cup pumpkin, cooked and pureed
    1 cup butter
    1 cup sugar
    2 eggs
    1 teaspoon Anchor Vanilla Essence
    2 cups flour, sifted
    1 cup sultanas 
    1 cup raisins
    A Pinch of salt


Method
- Beat butter and sugar until light in colour and well aerated.
- slowly add eggs in several lots and beat until smooth with each addition.   
Carefull fold in flour and salt, and then fold in fruit and pumpkin puree.
- Turn into a lined large cake tin and bake in a preheated oven at 150 c for 75-90 minutes or until an inserted skewer comes out clean.

FRUIT CAKE


Ingredients


4 cups flour
1tsp mace
1/4 tsp nutmeg
2tsp cinnamon
1/2 tsp baking soda
2-1/2 cup currants
2 cups raisins
2 cups blanched almonds, sliced
2 cups light brown sugar
9 eggs
1 cup cold coffee


Method


Sift first five ingredients together and mix with fruit and nuts. Beat eggs one at a time beating well after each addition. Beat in sugar. Then add flour, fruits mixture alternately with coffee. Turn into greased pan lined with greased paper. Bake at 275 F for 3-4 hours.
